Clay Cantina – Plant Based Mexico
Clay Cantina workshop Vibrant flavours of the Caribbean Mayan Mexico
In this 5 hour session – we learn the popular street snacks and tacos of the Coastal Yucatan region: Tulum, Playa del Carmen and Merida city
what you can expect –
Welcome – arrive to enjoy a refreshing agua fresca, meet your class mates, receive your recipes and go over the menu and class plan, before jumping into our hands on lesson making and creating a delicious menu.
The Cuisine of Mexico is UNESCO world heritage listed. We will use a range of traditional processes and ingredients to prepare the dishes. During the class we will pause to focus on some of these – Ie learning to flame, roast, soak a range of chiles to bring out alternative flavours.. or using clay mortar and pestles (Molcajete) to prepare earthy marinades and salsas.
What we will make –
Prepare classic guacamole in the clay Molcajete (mortar and pestle)
Fresh Ceviche – Mexican style
plus 2 fresh salsas to enjoy with tortilla chips
Tacos & Tostadas: we prepare different Taco fillings i.e.
Pork Pibil – with traditional red onion and habanero pickle Mushrooms spiced with Guajillo chiles Spiced Prawns with Mango Salsa Chicken Tinga with homemade Mexican Chorizo No taco meal is complete without plenty of fresh finishes and flavoursome salsas – we will prepare those too.
We stop for a break enjoying refreshments and the snacks that you have prepared, and finish the session by sitting together to enjoy everything we have made.
Yours to take home will be your Clay Cantina recipes and there is option to purchase some of the clay cooking tools like the ones used during the class.
